For the Pastry:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter (cold, cubed)
- 6 tablespoons ice-cold water
For the Filling:
- 4 medium potatoes (thinly sliced)
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Irish cheddar cheese
- 4 slices bacon (cooked and crumbled)
- 2 green onions (chopped)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 egg (for egg wash)

Prepare the Pastry:
- In a large bowl, mix flour and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, and mix until a dough forms.
- Wrap and chill for 30 minutes.

Preheat oven to 375°F (190°C). Grease a 9-inch tart or pie pan.

Roll out the chilled dough and press it into the pan, trimming any excess. Prick the bottom with a fork and blind bake for 10 minutes.

Prepare the Filling:
- In a bowl, mix heavy cream, milk, salt, pepper, and thyme.
- Layer half of the sliced potatoes in the crust.
- Sprinkle with half of the cheese and bacon, then repeat with the remaining potatoes and cheese.
- Pour the cream mixture evenly over the top.
- Sprinkle with green onions.

- Cover loosely with foil and bake for 35 minutes.
- Remove foil, brush the crust with egg wash, and bake uncovered for another 15 minutes until golden brown.

- Let cool slightly before slicing.
- Serve warm.

- For a vegetarian version, omit the bacon and add sautéed leeks or mushrooms.
