For the Pastry:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter (cold, cubed)
  • 6 tablespoons ice-cold water

For the Filling:

  • 4 medium potatoes (thinly sliced)
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 cup shredded Irish cheddar cheese
  • 4 slices bacon (cooked and crumbled)
  • 2 green onions (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Pastry:

    • In a large bowl, mix flour and salt.
    • Cut in the cold butter until the mixture resembles coarse crumbs.
    • Add ice water, one tablespoon at a time, and mix until a dough forms.
    • Wrap and chill for 30 minutes.
  2. Preheat oven to 375°F (190°C). Grease a 9-inch tart or pie pan.

  3. Roll out the chilled dough and press it into the pan, trimming any excess. Prick the bottom with a fork and blind bake for 10 minutes.

  4. Prepare the Filling:

    • In a bowl, mix heavy cream, milk, salt, pepper, and thyme.
    • Layer half of the sliced potatoes in the crust.
    • Sprinkle with half of the cheese and bacon, then repeat with the remaining potatoes and cheese.
    • Pour the cream mixture evenly over the top.
    • Sprinkle with green onions.
  5. Bake:

    • Cover loosely with foil and bake for 35 minutes.
    • Remove foil, brush the crust with egg wash, and bake uncovered for another 15 minutes until golden brown.
  6. Serve:

    • Let cool slightly before slicing.
    • Serve warm.

  • For a vegetarian version, omit the bacon and add sautéed leeks or mushrooms.
