Description

This Traditional Irish Colcannon is a rich and creamy mashed potato dish blended with buttery cabbage and fresh green onions. A beloved staple of Irish cuisine, it’s perfect for St. Patrick’s Day or as a comforting side for any hearty meal. Top it with a pat of butter or crispy bacon for extra indulgence.


Ingredients

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and cubed
  • 4 tablespoons unsalted butter, plus more for serving
  • 1 cup whole milk
  • 2 cups green cabbage, finely shredded
  • 4 green onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

 

  • 4 slices cooked bacon, crumbled (optional)

Instructions

  1. Place cubed potatoes in a large pot, cover with water, and bring to a boil. Cook for 15–20 minutes until tender. Drain and return to pot.
  2. In a separate pan, melt butter over medium heat. Add shredded cabbage and sauté for about 5 minutes until softened.
  3. Stir milk into the cabbage and let it warm through.
  4. Mash the potatoes, then stir in the cabbage-milk mixture, green onions, salt, and pepper.
  5. Mix until smooth and creamy. Adjust seasoning to taste.
  6. Serve warm with a pat of butter on top and crumbled bacon if desired.

Notes

  • For extra creaminess, use a hand mixer to whip the potatoes.
  • Savoy cabbage or kale can be used as a substitute.
  • Delicious alongside corned beef, lamb, or roasted chicken.
