Made with juicy shrimp, garlic, cherry tomatoes, fresh spinach, and Parmesan cheese, this one-pan meal is tossed with pasta and a hint of lemon for a refreshing finish. Ready in just 30 minutes, it’s a deliciously simple seafood pasta recipe you’ll love!

Ingredients

Units Scale
  • 8 oz spaghetti (or pasta of choice)
  • 1 lb shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pasta water (reserved)
  • Juice of 1/2 lemon

Instructions

  1. Cook the pasta – Boil pasta in salted water until al dente. Reserve ¼ cup pasta water, then drain and set aside.
  2. Cook the shrimp – Heat olive oil & butter in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink. Remove and set aside.
  3. Sauté the garlic and tomatoes – In the same skillet, add garlic & cherry tomatoes. Sauté for 2 minutes until tomatoes soften.
  4. Add spinach – Stir in fresh spinach and cook until wilted. Add red pepper flakes for a little heat.
  5. Combine everything – Return the shrimp to the skillet, then add the cooked pasta, reserved pasta water, and lemon juice. Toss well to coat everything in the sauce.
  6. Serve and garnish – Sprinkle with grated Parmesan cheese, toss once more, and serve warm.

Notes

  • Swap spaghetti for whole wheat pasta, gluten-free pasta, or zucchini noodles for a healthier option.
  • Use chicken or tofu instead of shrimp for a different protein.
  • Add extra garlic or more red pepper flakes for a spicier kick.
  • Store leftovers in the fridge for up to 3 days—reheat with a splash of olive oil or water.
