Description

These Scalloped Potatoes are creamy, cheesy, and irresistibly delicious!   • 2 lbs russet or Yukon Gold potatoes, peeled and thinly sliced
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.

  2. Make the cream sauce: In a saucepan over medium heat, melt butter, then add garlic and cook for 30 seconds. Stir in flour and cook for 1 minute to form a roux.

  3. Whisk in milk & cream: Slowly add milk and heavy cream, whisking continuously until smooth. Add salt, black pepper, and smoked paprika. Simmer for 3-4 minutes until thickened. Remove from heat.

  4. Assemble the layers: Arrange half of the sliced potatoes in the baking dish. Pour half of the cream sauce over the top and sprinkle with half of the cheddar and Parmesan cheese. Repeat with the remaining potatoes, sauce, and cheese.

  5. Bake uncovered for 50-60 minutes, or until the potatoes are fork-tender and the top is golden brown.

  6. Garnish with fresh parsley and let rest for 5-10 minutes before serving.

  • Use a mandoline slicer for evenly thin potato slices.
  • Swap cheddar for Gruyère or Monterey Jack for a different cheese flavor.
