For the dough:

  • 3 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 tsp) instant yeast
  • 3/4 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 egg

For the Thai curry butter:

  • 1/2 cup unsalted butter, softened
  • 2 tablespoons Thai red curry paste
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast.
  2. Add warm milk, melted butter, and egg. Knead until a soft dough forms. Cover and let rise for 1 hour.
  3. In a small bowl, mix softened butter, Thai red curry paste, honey, garlic, cilantro, and salt until smooth.
  4. Roll the dough into a large rectangle and spread the Thai curry butter evenly over it.
  5. Cut dough into strips, stack them, then cut into squares. Place stacks into greased muffin tins.
  6. Cover and let rise for 30 minutes. Preheat oven to 375°F (190°C).
  7. Bake for 18–20 minutes until golden brown.
  8. Serve warm, garnished with extra cilantro if desired.
