Description
This One-Pot Taco Spaghetti combines the flavors of tacos with the comfort of spaghetti, all in a single pot! With ground beef, taco seasoning, and melted cheese, it’s an easy, flavorful weeknight dinner that the whole family will love.

- Base:
- 1 tablespoon olive oil
- 1 lb ground beef
- 1/2 cup yellow onion, diced
- 4 1/2 tablespoons taco seasoning
- Sauce:
- 1 tablespoon tomato paste
- 10 oz diced tomatoes (canned)
- Pasta:
- 8 oz spaghetti
- 3 cups water
- Toppings:
- 1/2 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1 Roma tomato, diced
- 2 tablespoons fresh cilantro, chopped
Instructions
- Cook the beef:
- Heat olive oil in a large stockpot over medium-high heat. Add the ground beef, diced onions, and taco seasoning. Cook for 3–5 minutes, breaking up the beef with a spoon, until browned.
- Add sauce ingredients:
- Stir in the tomato paste and diced tomatoes, mixing well.
- Cook the pasta:
- Add the spaghetti and 3 cups of water to the pot. Bring to a boil, then cover, reduce the heat to medium-low, and simmer for 15 minutes, or until the spaghetti is fully cooked.
- Add cheese and toppings:
- Remove the pot from heat. Sprinkle cheddar and mozzarella cheeses on top, along with the diced Roma tomato and fresh cilantro. Stir until the cheese is melted and evenly mixed.
- Serve:
- Garnish with additional tomatoes and cilantro if desired. Serve immediately and enjoy!
Notes
- Use ground turkey or chicken as a leaner alternative to ground beef.
- For a spicy kick, add diced jalapeños or a dash of hot sauce.
- Leftovers can be stored in the fridge for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water.
