  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon mastic powder (crushed with a bit of sugar)
  • 1/2 teaspoon salep powder (optional, for extra elasticity)
  • 1 teaspoon rose water or orange blossom water
  • 1/2 cup crushed pistachios (for coating)

Instructions

. Prepare the Ice Cream Base:

  1. In a saucepan, whisk together milk, sugar, cornstarch, and salep powder (if using).
  2. Heat over medium, stirring continuously until the mixture thickens.
  3. Remove from heat and stir in heavy cream, rose water, and mastic powder until well combined.

2. Freeze & Stretch:

  1. Pour the mixture into a freezer-safe container and freeze for 1 hour.
  2. Once semi-frozen, stretch and knead the mixture using a spatula or wooden spoon to develop elasticity.
  3. Repeat the freezing and kneading process 2-3 times for the best texture.

3. Shape & Coat:

  1. Shape the ice cream into a log or individual scoops.
  2. Roll in crushed pistachios until fully coated.

4. Serve & Enjoy:

  • Slice and serve immediately or freeze for a firmer texture before serving.

Notes

  • Salep powder enhances elasticity, but Booza can still be made without it.
  • Use mastic sparingly—a little goes a long way in adding its distinctive flavor.
  • For easier stretching, place the semi-frozen ice cream in a stand mixer with a paddle attachment.
  • Serve with Arabic coffee or baklava for an authentic experience.
