Description

Wet Ingredients:

  • 4 large eggs
  • 1 cup vegetable oil

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups self-rising flour
  • 1/2 tsp cinnamon

Add-ins:

  • 2 cups pecans, chopped
  • 1/2 cup chocolate chips
  • 1/2 cup shredded coconut

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two loaf pans.
  2. Mix wet ingredients:
    • In a large mixing bowl, whisk together the eggs, vegetable oil, and vanilla extract until smooth and well combined.
  3. Combine dry ingredients:
    • In a separate bowl, mix the granulated sugar, brown sugar, self-rising flour, and cinnamon.
  4. Combine wet and dry:
    • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  5. Add the mix-ins:
    • Fold in the chopped pecans, chocolate chips, and shredded coconut until evenly distributed.
  6. Bake:
    • Pour the batter into the prepared pan(s) and spread evenly. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve:
    • Allow the pecan bread to cool completely before slicing. Serve as is or with a dollop of whipped cream for extra indulgence!

Notes

  • If you don’t have self-rising flour, substitute with all-purpose flour and add 3 tsp baking powder and 1/2 tsp salt.
  • For a deeper flavor, toast the pecans before adding them to the batter.
