Description

This Sun-Dried Tomato Avocado Grilled Cheese is a plant-based spin on a classic comfort food. Creamy vegan cream cheese, mashed avocado, and tangy sun-dried tomatoes are layered with fresh greens between crispy, golden slices of hearty whole grain bread. It’s a quick, flavor-packed sandwich perfect for family meals, picnics, or casual vegan entertaining.


Ingredients

  • 4 slices hearty whole grain or sourdough bread

  • 1 ripe avocado, mashed

  • 1/4 cup sun-dried tomatoes (oil-packed), sliced

  • 1/2 cup vegan cream cheese (or cashew spread)

  • 1/2 cup baby arugula or spinach

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon black pepper

 

  • Vegan butter or olive oil, for grilling


Instructions

  1. Optional: Lightly toast bread slices for 1–2 minutes for extra crispness.

  2. In a small bowl, mash avocado with garlic powder and black pepper.

  3. Spread vegan cream cheese on two slices of bread.

  4. Spread mashed avocado on the other two slices.

  5. Layer sun-dried tomatoes and arugula or spinach on the avocado-covered sides.

  6. Close sandwiches with the cream cheese sides on top of the fillings.

  7. Heat a non-stick skillet over medium heat. Add vegan butter or olive oil.

  8. Grill sandwiches 2–3 minutes per side, until golden and crispy.

  9. Slice and serve warm with soup, salad, or fresh fruit.

Notes

  • Cashew cream cheese works wonderfully for extra tang.

  • Add sliced red onions or vegan mozzarella for a flavor boost.
