- 2 sprigs of thyme (plus extra for garnish)
- 2 tbsp olive oil
- Salt, to taste

Preparation
- Wash the quails thoroughly and pat them dry. Rub them with salt and let them rest for 30 minutes.
- Stuff each quail with chopped garlic, dried plum, sage leaves, and a small piece of rosemary.
- Add a piece of dried bread inside each quail to soak up the juices.
- Wrap each quail with two slices of bacon and secure with a toothpick.
- Place the quails in an oven-safe dish, sprinkle thyme on top, and brush with olive oil.
Cooking
- Preheat the oven to 180°C (356°F).
- Bake the quails for 40 minutes, adjusting the time based on your oven’s power.
- For crispy skin, switch to the grill function for the last 5 minutes.
- Remove from the oven and let rest before serving.
