Description

Ingredients

  • 4 boned quails (fresh or frozen)
  • 8 slices of bacon
  • 4 dried plums (pitted and chopped)
  • 2 slices of dried bread (or toasted bread)
  • 4 cloves garlic (chopped)
  • 4 fresh sage leaves
  • 2 sprigs of rosemary
  • 2 sprigs of thyme (plus extra for garnish)
  • 2 tbsp olive oil
  • Salt, to taste

Instructions

Preparation

  1. Wash the quails thoroughly and pat them dry. Rub them with salt and let them rest for 30 minutes.
  2. Stuff each quail with chopped garlic, dried plum, sage leaves, and a small piece of rosemary.
  3. Add a piece of dried bread inside each quail to soak up the juices.
  4. Wrap each quail with two slices of bacon and secure with a toothpick.
  5. Place the quails in an oven-safe dish, sprinkle thyme on top, and brush with olive oil.

Cooking

  1. Preheat the oven to 180°C (356°F).
  2. Bake the quails for 40 minutes, adjusting the time based on your oven’s power.
  3. For crispy skin, switch to the grill function for the last 5 minutes.
  4. Remove from the oven and let rest before serving.

  • Use dried or stale bread for better stuffing texture.
