Description

This Comforting Stuffed Pepper Soup brings all the flavors of classic stuffed peppers into a hearty and easy one-pot meal! Made with ground beef, bell peppers, tomatoes, and rice, this rich and flavorful soup is a family favorite perfect for cozy dinners.


Ingredients

For the Soup:

  • 1 lb ground beef (or ground turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers (red and green), chopped
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika (optional)

For the Rice:

  • 1 cup cooked white or brown rice

For Garnish:

  • 1/4 cup shredded cheddar or Parmesan cheese (optional)
  • Fresh parsley, chopped

Instructions

  1. Cook the Beef: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Sauté Vegetables: Add diced onion, garlic, and bell peppers. Cook for 3–4 minutes until softened.
  3. Add Liquids & Seasonings: Stir in diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, salt, black pepper, and smoked paprika. Bring to a boil, then reduce heat and simmer for 25 minutes.
  4. Add Rice: Stir in cooked rice and let simmer for another 5 minutes. Adjust seasoning as needed.
  5. Serve & Enjoy: Ladle into bowls, top with shredded cheese and parsley, and serve warm.

Notes

  • For a lower-carb version, use cauliflower rice instead of white rice.
  • Add a pinch of red pepper flakes for extra heat.
  • Store leftovers in an airtight container for up to 3 days.
