For the Soup:
- 1 lb ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 bell peppers (red and green), chopped
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef broth
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika (optional)
For the Rice:
- 1 cup cooked white or brown rice
For Garnish:
- 1/4 cup shredded cheddar or Parmesan cheese (optional)
- Fresh parsley, chopped
Instructions
- Cook the Beef: In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
- Sauté Vegetables: Add diced onion, garlic, and bell peppers. Cook for 3–4 minutes until softened.
- Add Liquids & Seasonings: Stir in diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, salt, black pepper, and smoked paprika. Bring to a boil, then reduce heat and simmer for 25 minutes.
- Add Rice: Stir in cooked rice and let simmer for another 5 minutes. Adjust seasoning as needed.
- Serve & Enjoy: Ladle into bowls, top with shredded cheese and parsley, and serve warm.
Notes
- For a lower-carb version, use cauliflower rice instead of white rice.
- Add a pinch of red pepper flakes for extra heat.
