Description

This Strawberry Mousse is a light, creamy, and refreshing dessert made with fresh strawberries, whipped cream, and a touch of vanilla. With its smooth, airy texture and natural sweetness, this easy homemade mousse is perfect for a summer treat or an elegant dessert for any occasion. No baking required, just chill and enjoy!


Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar (or honey)
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 1/2 tsp unflavored gelatin powder
  • 2 tbsp cold water
  • 1 cup heavy whipping cream, chilled

Instructions

  1. Make the strawberry puree – In a blender, blend strawberries, sugar, and lemon juice until smooth.
  2. Heat the puree – Pour the puree into a small saucepan and heat over low heat for 2-3 minutes, stirring occasionally. Remove from heat and stir in vanilla extract.
  3. Prepare the gelatin – In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes until softened. Microwave for 10 seconds until melted, then stir into the warm strawberry puree.
  4. Chill the mixture – Place the strawberry mixture in the refrigerator for 15-20 minutes until slightly thickened but not fully set.
  5. Whip the cream – In a large bowl, beat heavy whipping cream to stiff peaks using a hand mixer.
  6. Fold and combine – Gently fold the chilled strawberry mixture into the whipped cream until fully combined.
  7. Chill and serve – Spoon into serving glasses and refrigerate for at least 2 hours to set. Garnish with fresh strawberries and extra whipped cream before serving.

Notes

  • Swap granulated sugar for powdered sugar for a smoother texture.
  • For a dairy-free version, use coconut cream instead of heavy cream.
  • Adjust sweetness by adding more or less sugar to taste.
