- 2 tbsp cold water
- 1 cup heavy whipping cream, chilled
Instructions
- Make the strawberry puree – In a blender, blend strawberries, sugar, and lemon juice until smooth.
- Heat the puree – Pour the puree into a small saucepan and heat over low heat for 2-3 minutes, stirring occasionally. Remove from heat and stir in vanilla extract.
- Prepare the gelatin – In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes until softened. Microwave for 10 seconds until melted, then stir into the warm strawberry puree.
- Chill the mixture – Place the strawberry mixture in the refrigerator for 15-20 minutes until slightly thickened but not fully set.
- Whip the cream – In a large bowl, beat heavy whipping cream to stiff peaks using a hand mixer.
- Fold and combine – Gently fold the chilled strawberry mixture into the whipped cream until fully combined.
- Chill and serve – Spoon into serving glasses and refrigerate for at least 2 hours to set. Garnish with fresh strawberries and extra whipped cream before serving.
