Instructions
- Preheat Oven and Prepare Pan:
- Preheat your oven to 325°F (163°C).
- Line a mini muffin tin or silicone mold with liners or grease lightly.
- Make the Crust:
- In a bowl, combine crushed graham crackers or golden Oreos with melted butter.
- Press about 1 tablespoon of the mixture into the bottom of each mold.
- Bake for 5 minutes to set, then cool slightly.
- Prepare the Cheesecake Filling:
- Beat softened cream cheese and sugar together until smooth.
- Mix in vanilla extract and sour cream until combined.
- Add eggs one at a time, mixing after each addition.

- Bake for 18–20 minutes, or until the centers are just set. Let cool completely.
- Make the Strawberry Crunch Topping:
- Combine crushed golden Oreos, freeze-dried strawberries, and melted butter in a small bowl.
- Decorate:
