Instructions

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 325°F (163°C).
    • Line a mini muffin tin or silicone mold with liners or grease lightly.
  2. Make the Crust:
    • In a bowl, combine crushed graham crackers or golden Oreos with melted butter.
    • Press about 1 tablespoon of the mixture into the bottom of each mold.
    • Bake for 5 minutes to set, then cool slightly.
  3. Prepare the Cheesecake Filling:
    • Beat softened cream cheese and sugar together until smooth.
    • Mix in vanilla extract and sour cream until combined.
    • Add eggs one at a time, mixing after each addition.
    • Fold in strawberry puree or jam until evenly distributed.
  4. Assemble and Bake:
    • Spoon cheesecake mixture over the cooled crust, filling each mold almost to the top.
    • Bake for 18–20 minutes, or until the centers are just set. Let cool completely.
