Ingredients

Units Scale
  • Produce:
    • 3 large bananas (sliced)
    • 1 cup strawberries (fresh or frozen, for sauce)
    • 1/2 cup strawberries (diced, for topping)
  • Condiments:
    • 1 tbsp lemon juice
  • Baking & Spices:
    • 1/4 cup brown sugar
    • 1/3 cup cornstarch
    • 3/4 cup granulated sugar
    • 1/4 tsp salt
    • 1 tsp vanilla extract
  • Snacks:
    • 1 cup vanilla wafers or graham crackers (crushed)
  • Dairy:
    • 1/4 cup unsalted butter (melted)
    • 2 cups whole milk
    • 1 cup whipped topping

Instructions

1. Make the Strawberry Sauce:

  • Combine 1 cup strawberries, ¼ cup brown sugar, and 1 tbsp lemon juice in a saucepan.
  • Cook over medium heat, stirring occasionally, until the strawberries break down and the sauce thickens (about 5 minutes).
  • Remove from heat and let cool.

2. Prepare the Banana Pudding:

  • In a medium saucepan, whisk together ⅓ cup cornstarch, ¾ cup granulated sugar, and ¼ tsp salt.
  • Gradually add 2 cups whole milk, whisking to combine.
  • Cook over medium heat, stirring constantly, until the mixture thickens (about 5–7 minutes).
  • Remove from heat and stir in 1 tsp vanilla extract. Allow to cool slightly.

3. Make the Crunch Topping:

  • Combine 1 cup crushed vanilla wafers or graham crackers with ¼ cup melted butter.
  • Stir until the mixture resembles coarse crumbs.

4. Assemble the Pudding:

  • In a serving dish or individual cups, layer as follows:
    • A layer of banana pudding
    • Sliced bananas
    • A drizzle of strawberry sauce
    • Repeat layers until all ingredients are used, finishing with a layer of pudding.

5. Add Crunch and Garnish:

  • Top with the crushed vanilla wafer mixture and diced strawberries.
  • Add a dollop of whipped topping before serving.

Notes

  • Make Ahead: Assemble up to a day in advance and add the topping just before serving for optimal crunch.
  • Strawberry Variations: Use frozen strawberries if fresh aren’t available, but adjust cooking time to account for excess moisture.
  • Storage: Store in the refrigerator in an airtight container for up to 2 days.
