For the Steaks:

  • 4 beef steaks (filet mignon, fillet, or ribeye, approximately 2.5 cm thick)
  • Salt and pepper to taste
  • 2 tbsp olive oil

For the Shrimp Scampi:

  • 450 g prawns (peeled and deveined)
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 1/4 cup dry white wine (or chicken broth)
  • 1/4 cup fresh lemon juice
  • 1/2 tsp red chili flakes (optional)
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Steaks:

  1. Remove steaks from the refrigerator 20 minutes before cooking to bring them to room temperature.
  2. Generously season both sides of the steaks with salt and pepper.
  3. Heat a cast iron or large skillet over medium-high heat. Add olive oil and heat until very hot.
  4. Sear the steaks for 3-4 minutes on each side for a crispy crust (adjust cook time for your desired doneness).
  5. Remove the steaks, cover with aluminum foil, and let rest.

2. Prepare the Shrimp Scampi:

  1. In the same pan, melt 1 tbsp butter over medium heat.
  2. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Add minced garlic to the pan and sauté until fragrant (about 30 seconds).
  4. Deglaze the pan with white wine (or chicken broth), scraping up any browned bits. Let simmer for 1 minute.
  5. Stir in lemon juice, red chili flakes (if using), the remaining butter, and a pinch of salt and pepper until sauce is smooth.
  6. Return shrimp to the pan and toss to coat in the sauce. Add fresh parsley.

Notes

  • For a spicier kick, increase the amount of chili flakes.
  • Use a meat thermometer for perfect steak doneness: 52°C for rare, 60°C for medium, and 71°C for well-done.
