  • 1 tsp fresh thyme or rosemary (optional)
  • Salt and black pepper to taste

For the Grilled Shrimp:

  • 1/2 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes (optional, for spice)
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

For Serving (Optional):

  • Mashed potatoes or roasted potatoes
  • Grilled asparagus or garlic butter green beans
  • Lemon wedges

Instructions

1. Prepare the Steak:

  1. Remove steaks from the fridge 30 minutes before cooking to bring them to room temperature.
  2. Season generously with salt and black pepper.
  3. Heat olive oil in a cast-iron skillet over medium-high heat.
  4. Sear steaks for 3-4 minutes per side (for medium-rare), then reduce heat.
  5. Add butter, garlic, and herbs, spooning the melted butter over the steaks for 1-2 minutes.
  6. Remove steaks from the pan and let rest for 5-10 minutes.

2. Grill the Shrimp:

  1. In a bowl, mix shrimp, olive oil, melted butter, garlic, paprika, red pepper flakes, salt, and black pepper.
  2. Heat a grill pan or outdoor grill over medium heat.
  3. Grill shrimp for 2 minutes per side, until pink and opaque.
  4. Drizzle with lemon juice and sprinkle with fresh parsley.

3. Assemble & Serve:

  1. Plate the steak and shrimp together.
  2. Serve with mashed potatoes, grilled vegetables, or your favorite side.
  3. Garnish with lemon wedges and extra garlic butter drizzle.

Notes

  • Want extra flavor? Marinate shrimp in garlic butter and lemon zest for 30 minutes before grilling.
  • No grill? Cook shrimp in a skillet over medium-high heat for the same results.
  • Make it a surf & turf sandwich! Slice steak and serve on a toasted brioche bun with grilled shrimp and garlic aioli.
