- 1 package chocolate sandwich cookies, crushed
- 1/2 cup melted butter
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 tub (8 oz) whipped topping
- 2 cups mint chocolate chip ice cream, softened
- 1 package instant chocolate pudding
- 2 cups milk
- Chocolate shavings for garnish
Instructions
- Make the crust: Mix crushed cookies with melted butter and press firmly into the bottom of a baking dish.
- Prepare the cream cheese layer: In a bowl, beat cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread evenly over the cookie crust.
- Add the ice cream layer: Spread softened mint chocolate chip ice cream over the cream cheese layer. Place in the freezer for 30 minutes to set.
- Prepare the pudding layer: Whisk together instant chocolate pudding and 2 cups milk until thickened. Spread over the frozen ice cream layer.
- Top and chill: Spread the remaining whipped topping over the pudding layer and sprinkle with chocolate shavings. Chill in the refrigerator for at least 2 hours before serving.
