Ingredients

2 tablespoons olive oil

1 small yellow onion, chopped

2 garlic cloves, minced

4 cups green peas (fresh or frozen)

3 cups vegetable broth

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup fresh mint leaves

2 tablespoons lemon juice

1/3 cup coconut cream or heavy cream (plus more for garnish)

Microgreens or extra peas, for garnish
Instructions

Heat olive oil in a medium pot over medium heat. Sauté onion for 4–5 minutes until soft. Add garlic and cook for another minute until fragrant.

Stir in peas and broth. Bring to a boil, then reduce heat and simmer for 5–7 minutes until peas are tender.

Remove from heat and stir in salt, pepper, mint, lemon juice, and cream.

Blend with an immersion blender or transfer in batches to a blender. Purée until smooth and creamy.

Taste and adjust seasoning. Thin with extra broth if desired.

Serve hot or chilled, garnished with a drizzle of cream and topped with microgreens or extra peas.
