- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 16 oz frozen spinach, thawed and drained (or 10 oz fresh spinach, sautéed)
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded Gruyère or cheddar cheese
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet, melt butter over medium heat. Add chopped onion and cook until soft.
- Stir in garlic and flour, cooking for 1 minute to remove the raw flour taste.
- Slowly whisk in milk and heavy cream, stirring until thickened.
- Add nutmeg, salt, and pepper. Stir in spinach and mix well.
- Remove from heat and stir in Parmesan cheese.
- Transfer mixture to the baking dish, top with shredded cheese, and bake for 20-25 minutes until bubbly and golden brown.
- Let cool slightly before serving.
Notes
- Swap Gruyère for cheddar or Swiss cheese based on preference.
- For extra crispiness, add a sprinkle of breadcrumbs before baking.
