Ingredients

Units Scale
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 16 oz frozen spinach, thawed and drained (or 10 oz fresh spinach, sautéed)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded Gruyère or cheddar cheese

Instructions

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • In a skillet, melt butter over medium heat. Add chopped onion and cook until soft.
  • Stir in garlic and flour, cooking for 1 minute to remove the raw flour taste.
  • Slowly whisk in milk and heavy cream, stirring until thickened.
  • Add nutmeg, salt, and pepper. Stir in spinach and mix well.
  • Remove from heat and stir in Parmesan cheese.
  • Transfer mixture to the baking dish, top with shredded cheese, and bake for 20-25 minutes until bubbly and golden brown.
  • Let cool slightly before serving.

Notes

  • Swap Gruyère for cheddar or Swiss cheese based on preference.
  • For extra crispiness, add a sprinkle of breadcrumbs before baking.
  • Can be prepared in advance and baked before serving.
