For the Pastry Cups
- 1 sheet puff pastry (thawed) or
- 24 mini phyllo shells
For the Spinach Dip Filling
- 1 cup frozen spinach (thawed & drained)
- 4 oz (1/2 cup) cream cheese (softened)
- 1/2 cup sour cream
- 1/2 cup shredded mozzarella (plus extra for topping)
- 1/4 cup grated Parmesan cheese
- 1 clove garlic (minced)
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt & pepper to taste
Instructions

Preheat & Prepare
- Preheat oven to 190°C (375°F).
- Lightly grease a mini muffin tin (if using puff pastry).

Make the Pastry Cups
- If using puff pastry, cut into 2-inch squares and press each into a mini muffin tin.
- If using phyllo shells, place them on a baking sheet.

Prepare the Spinach Dip Filling
- In a bowl, mix cream cheese, sour cream, spinach, mozzarella, Parmesan, garlic, onion powder, red pepper flakes, salt, and pepper until smooth.

Assemble the Bites
- Spoon about 1 tablespoon of the spinach dip mixture into each pastry cup.
- Top with extra shredded mozzarella or Parmesan.

- Bake for 15–18 minutes, or until the pastry is golden and the cheese is melted and slightly crispy.
- Let cool for a few minutes, then serve warm.
