Description

These Spinach Dip Bites are the ultimate bite-sized appetizer for Easter! For the Pastry Cups

  • 1 sheet puff pastry (thawed) or
  • 24 mini phyllo shells

For the Spinach Dip Filling

  • 1 cup frozen spinach (thawed & drained)
  • 4 oz (1/2 cup) cream cheese (softened)
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella (plus extra for topping)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic (minced)
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt & pepper to taste

Instructions

  1. Preheat & Prepare

    • Preheat oven to 190°C (375°F).
    • Lightly grease a mini muffin tin (if using puff pastry).
  2. Make the Pastry Cups

    • If using puff pastry, cut into 2-inch squares and press each into a mini muffin tin.
    • If using phyllo shells, place them on a baking sheet.
  3. Prepare the Spinach Dip Filling

    • In a bowl, mix cream cheese, sour cream, spinach, mozzarella, Parmesan, garlic, onion powder, red pepper flakes, salt, and pepper until smooth.
  4. Assemble the Bites

    • Spoon about 1 tablespoon of the spinach dip mixture into each pastry cup.
    • Top with extra shredded mozzarella or Parmesan.
  5. Bake & Serve

    • Bake for 15–18 minutes, or until the pastry is golden and the cheese is melted and slightly crispy.
    • Let cool for a few minutes, then serve warm.
