Description

Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

 

  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Pat chickpeas dry thoroughly with a paper towel.
  • Toss chickpeas with olive oil, paprika, cayenne, garlic powder, salt, and pepper.
  • Spread chickpeas on the baking sheet and roast for 25–30 minutes, stirring halfway.
  • Add almonds, cashews, sunflower seeds, and pumpkin seeds in the last 10 minutes.

 

  • Let cool completely and store in an airtight container.

Notes

  • Customize with your favorite nuts or add dried fruit for a sweet twist.
