Instructions
Make the Waffles:
- Preheat a waffle iron.

- Cook the waffles in the preheated waffle iron until golden and crispy. Set aside.
Prepare the Queso Dip:
- Sauté aromatics: Melt butter in a saucepan over medium heat. Add chopped onion and diced jalapeño, sautéing until soft.
- Add seasonings: Stir in evaporated milk, cumin, garlic powder, salt, and black pepper.
- Melt the cheese: Reduce heat to low and add shredded cheddar cheese, stirring until smooth and creamy.
- Finish: Stir in diced tomatoes and cook for 1-2 minutes.
- Serve: Garnish with sliced jalapeños and serve warm alongside the crispy waffles for dipping.
Notes
- For extra heat, use a spicier cheese blend or add more jalapeños.
- Try swapping cheddar for pepper jack cheese for a more complex flavor.
- Leftover waffles can be reheated in the toaster for extra crispiness.
