Ingredients

Units Scale

For the Cornbread Waffles:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup corn kernels (optional)

For the Queso Dip:

  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 1 jalapeño, finely diced
  • 1 cup evaporated milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes (canned or fresh)
  • Sliced jalapeños for garnish

Instructions

Make the Waffles:

  1. Preheat a waffle iron.
  2. Mix dry ingredients: In a bowl, whisk together cornmeal, flour, baking powder, salt, and smoked paprika.
  3. Combine wet ingredients: In another bowl, mix buttermilk, eggs, and melted butter. Pour into the dry ingredients and stir until combined.
  4. Fold in the shredded cheese and corn kernels (if using).
  5. Cook the waffles in the preheated waffle iron until golden and crispy. Set aside.

Prepare the Queso Dip:

  1. Sauté aromatics: Melt butter in a saucepan over medium heat. Add chopped onion and diced jalapeño, sautéing until soft.
  2. Add seasonings: Stir in evaporated milk, cumin, garlic powder, salt, and black pepper.
  3. Melt the cheese: Reduce heat to low and add shredded cheddar cheese, stirring until smooth and creamy.
  4. Finish: Stir in diced tomatoes and cook for 1-2 minutes.
  5. Serve: Garnish with sliced jalapeños and serve warm alongside the crispy waffles for dipping.

Notes

  • For extra heat, use a spicier cheese blend or add more jalapeños.
  • Try swapping cheddar for pepper jack cheese for a more complex flavor.
  • Leftover waffles can be reheated in the toaster for extra crispiness.
