- 1 cup buttermilk
- 1 egg

- 1 cup cooked crawfish tails (chopped)
- 1/4 cup green onions (chopped)
- Vegetable oil (for frying)
For the Filling:
- 4 oz cream cheese (softened)
- 1/2 cup shredded pepper jack cheese
- 1/2 tsp garlic powder
- 1/2 tsp Cajun seasoning
Instructions
Prepare the Filling:
- In a bowl, mix cream cheese, pepper jack cheese, garlic powder, and Cajun seasoning until smooth. Set aside.
Make the Dough:
- In a large bowl, whisk flour, baking powder, salt, and cayenne pepper.
- In a separate bowl, mix buttermilk and egg, then add to the dry ingredients.
- Stir in cheddar cheese, crawfish tails, and green onions until well combined.
Assemble the Beignets:
- Take a spoonful of dough, flatten slightly, add a small scoop of filling, then fold over and seal the edges.
Fry:
- Heat vegetable oil to 350°F (175°C) in a deep pan or fryer.
- Fry beignets in batches for 3-4 minutes per side, until golden brown.
