For the Beignets:
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup shredded cheddar cheese
  • 1 cup cooked crawfish tails (chopped)
  • 1/4 cup green onions (chopped)
  • Vegetable oil (for frying)
For the Filling:
  • 4 oz cream cheese (softened)
  • 1/2 cup shredded pepper jack cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Cajun seasoning

Instructions

Prepare the Filling:
  1. In a bowl, mix cream cheese, pepper jack cheese, garlic powder, and Cajun seasoning until smooth. Set aside.
Make the Dough:
  1. In a large bowl, whisk flour, baking powder, salt, and cayenne pepper.
  2. In a separate bowl, mix buttermilk and egg, then add to the dry ingredients.
  3. Stir in cheddar cheese, crawfish tails, and green onions until well combined.
Assemble the Beignets:
  1. Take a spoonful of dough, flatten slightly, add a small scoop of filling, then fold over and seal the edges.
Fry:
  1. Heat vegetable oil to 350°F (175°C) in a deep pan or fryer.
  2. Fry beignets in batches for 3-4 minutes per side, until golden brown.
  3. Remove and drain on paper towels.
Serve:
  1. Sprinkle with Cajun seasoning and serve hot!
