- 1 lb boneless, skinless chicken breast, diced
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garam masala
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup coconut milk or chicken broth
- 1 tablespoon olive oil
Instructions
1. Prepare the Spiced Pastry:
- In a bowl, combine flour, turmeric, cumin seeds, and salt.
- Add cold butter and rub into the flour until the mixture resembles coarse crumbs.
- Gradually add cold water, kneading gently until a dough forms.
- Wrap and chill for 30 minutes.
2. Make the Curried Chicken Filling:
- Heat olive oil in a pan over medium heat.
- Add onions and garlic, sautéing until soft.
- Stir in diced chicken, curry powder, ginger, garam masala, salt, and pepper. Cook until the chicken is browned.
- Pour in coconut milk or broth and simmer until thickened.
- Let cool completely before assembling.
3. Assemble the Pastries:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the pastry dough and cut into circles or ovals.
- Spoon a portion of the filling onto one side of each pastry. Fold over and crimp the edges to seal.
- Brush with egg wash and sprinkle with extra cumin seeds.
