Ingredients

  • 2 cups chicken or vegetable broth
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1/2 cup tomato sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  • Toast the rice: Heat olive oil in a skillet over medium heat. Add rice and sauté until lightly golden, stirring frequently.
  • Combine ingredients: Pour in the broth, Rotel tomatoes (with juices), and tomato sauce. Stir well to combine.
  • Season: Add garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix thoroughly.
  • Cook: Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  • Finish: Fluff with a fork and serve hot.

Notes

  • For extra flavor, sauté a small chopped onion and minced garlic before adding the rice.
