- 2 cups chicken or vegetable broth
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 1/2 cup tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Toast the rice: Heat olive oil in a skillet over medium heat. Add rice and sauté until lightly golden, stirring frequently.
- Combine ingredients: Pour in the broth, Rotel tomatoes (with juices), and tomato sauce. Stir well to combine.
- Season: Add garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix thoroughly.
- Cook: Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Finish: Fluff with a fork and serve hot.
Notes
- For extra flavor, sauté a small chopped onion and minced garlic before adding the rice.
