Description

A traditional Spanish dish featuring golden, pan-fried potatoes simmered in a rich saffron-infused sauce. This comforting and flavorful recipe is a staple in Spanish cuisine, perfect as a main dish or side.

Ingredients

Units Scale
  • 4 medium potatoes, peeled and sliced into 1/2-inch rounds
  • 1/2 cup all-purpose flour (for coating)
  • 2 eggs, beaten
  • 1/4 cup olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads (or turmeric as a substitute)
  • 2 cups chicken or vegetable broth
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  • Prepare the potatoes: Lightly season the potato slices with salt and pepper. Dredge each slice in flour, then dip into the beaten eggs.
  • Fry the potatoes: Heat olive oil in a large skillet over medium heat. Fry potatoes until golden brown on both sides, then set aside.
  • Make the sauce: In the same pan, sauté the chopped onion and garlic until softened.
  • Add seasonings: Stir in smoked paprika and saffron, then pour in the broth. Let it simmer for 2 minutes to blend the flavors.
  • Simmer the potatoes: Return the potatoes to the pan, cover, and simmer for 15 minutes until tender and infused with the sauce.
  • Garnish and serve: Sprinkle with fresh parsley and serve warm.

Notes

  • Saffron gives the dish its distinct flavor and color, but turmeric works as an affordable substitute.
  • Serve with crusty bread to soak up the flavorful sauce.
  • For a heartier version, add peas or cooked chorizo.
