Instructions
- Prepare the potatoes: Lightly season the potato slices with salt and pepper. Dredge each slice in flour, then dip into the beaten eggs.
- Fry the potatoes: Heat olive oil in a large skillet over medium heat. Fry potatoes until golden brown on both sides, then set aside.
- Make the sauce: In the same pan, sauté the chopped onion and garlic until softened.
- Add seasonings: Stir in smoked paprika and saffron, then pour in the broth. Let it simmer for 2 minutes to blend the flavors.
- Simmer the potatoes: Return the potatoes to the pan, cover, and simmer for 15 minutes until tender and infused with the sauce.
- Garnish and serve: Sprinkle with fresh parsley and serve warm.
