- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 eggs
- 1/2 cup water or milk
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped

- Salt and black pepper to taste

Instructions
- Desalt the cod: Soak the salted cod in water for 24 hours, changing the water a few times. Drain and flake it into small pieces.
- Prepare the batter: In a bowl, whisk the eggs with water (or milk). Add flour, baking powder, paprika, salt, and black pepper. Mix until smooth.
- Combine ingredients: Stir in the flaked cod, minced garlic, and chopped parsley. Let the batter rest for 10 minutes.
- Heat oil: In a deep pan, heat vegetable oil to 350°F (175°C).
- Fry the fritters: Drop spoonfuls of batter into the hot oil, frying for 2-3 minutes per side until golden brown and crispy.
- Drain and serve: Remove from oil and drain on paper towels. Serve warm with aioli or lemon wedges.

- If using fresh cod instead of salted, lightly season with salt before mixing into the batter.
- For an extra crispy texture, fry in small batches to avoid crowding the pan.
