Description

Crispy, golden Spanish cod fritters made with salted cod, herbs, and a light batter. These flavorful bites are a classic tapa, perfect as an appetizer or snack with a side of aioli or a squeeze of lemon.

  • 8 oz salted cod (desalted and flaked)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 1/2 cup water or milk
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Desalt the cod: Soak the salted cod in water for 24 hours, changing the water a few times. Drain and flake it into small pieces.
  2. Prepare the batter: In a bowl, whisk the eggs with water (or milk). Add flour, baking powder, paprika, salt, and black pepper. Mix until smooth.
  3. Combine ingredients: Stir in the flaked cod, minced garlic, and chopped parsley. Let the batter rest for 10 minutes.
  4. Heat oil: In a deep pan, heat vegetable oil to 350°F (175°C).
  5. Fry the fritters: Drop spoonfuls of batter into the hot oil, frying for 2-3 minutes per side until golden brown and crispy.
  6. Drain and serve: Remove from oil and drain on paper towels. Serve warm with aioli or lemon wedges.

Notes

  • If using fresh cod instead of salted, lightly season with salt before mixing into the batter.
  • For an extra crispy texture, fry in small batches to avoid crowding the pan.
