Vanilla Glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter and sugar together in a mixing bowl until light and fluffy.
  3. Add egg and vanilla extract and mix until fully combined.
  4. Incorporate dry ingredients by stirring in flour and baking soda. Fold in the diced mango.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until edges are lightly golden. Let cookies cool on a wire rack.
  7. Prepare the glaze by whisking powdered sugar, milk, and vanilla extract until smooth.
  8. Drizzle glaze over cooled cookies and allow to set before serving.
