Instructions
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, and paprika on both sides.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown. Remove the chicken and set aside.
- Sauté the Aromatics:
- In the same skillet, melt the butter. Add the chopped onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and thyme, cooking for another minute.
- Make the Sauce:
- Sprinkle the flour over the onion mixture and stir well to form a roux. Gradually whisk in the chicken broth, ensuring there are no lumps. Stir in the heavy cream and bring the sauce to a simmer.
- Cook the Chicken:
- Return the chicken breasts to the skillet, spoon the sauce over them, and reduce the heat to low. Cover and simmer for 20-25 minutes, or until the chicken is cooked through and tender.
- Serve:
- Garnish with fresh parsley and serve the smothered chicken over mashed potatoes, rice, or pasta.
