Instructions

  1. Prepare the Chicken:
    • Season chicken breasts with salt, pepper, and paprika. Dredge lightly in flour, shaking off the excess.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat. Sear chicken breasts for 3–4 minutes per side until golden brown. Remove and set aside.
  3. Sauté Aromatics:
    • In the same skillet, melt butter. Add onions and sauté until softened (about 3 minutes). Stir in garlic and thyme, cooking for another minute.
  4. Make the Sauce:
    • Add chicken broth to deglaze the skillet, scraping up any browned bits. Stir in heavy cream and bring to a gentle simmer.
  5. Combine and Cook:
    • Return chicken breasts to the skillet, spooning sauce over the top. Cover and simmer for 20 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  6. Serve:
    • Garnish with chopped parsley and serve with mashed potatoes, rice, or roasted vegetables.
