Ingredients
-
8 oz smoked salmon slices
-
6 oz cream cheese, softened
-
1 tablespoon lemon juice
-
1 teaspoon lemon zest
-
1 tablespoon chopped fresh dill
-
1/4 cup finely diced cucumber
-
1/4 cup finely diced red onion
-
Salt and black pepper, to taste
-
Optional: capers and extra dill for garnish
Instructions
-
In a small bowl, combine the cream cheese, lemon juice, lemon zest, chopped dill, salt, and black pepper. Mix until smooth.
-
Lay out a large sheet of plastic wrap. Overlap smoked salmon slices into a roughly 8×10-inch rectangle.
-
Evenly spread the cream cheese mixture over the salmon surface.
-
Sprinkle diced cucumber and red onion over the cream cheese layer.
-
Starting from the short edge, tightly roll the salmon into a log, using the plastic wrap to help form a smooth, tight roll.
-
Refrigerate for at least 30 minutes to allow the roll to firm up.
-
Once chilled, slice into 1-inch pinwheels using a sharp knife.
-
Garnish with optional capers and dill. Serve chilled.
Notes
-
Use cold, thinly sliced smoked salmon for easier rolling and cleaner pinwheels.
-
These can be made up to a day ahead and stored tightly wrapped in the refrigerator.
-
Great served on cucumber rounds or crackers for a fancier presentation.
