Description

These plant-based date and nut rolls are a healthy, gluten-free, and vegan snack made with simple and natural ingredients. Perfect for on-the-go energy or as a nutritious treat!

  • 1/4 tsp salt

Nuts & Seeds:

  • 1/2 cup almonds
  • 1/2 cup pistachios (plus extra for coating, if desired)
  • 2 tbsp chia seeds

Instructions

 Prep the Ingredients:

  1. Soak the chopped dates in warm water for 10-15 minutes to soften them. Drain well.
  2. Pulse the almonds and pistachios in a food processor until finely chopped but not powdered.

2. Combine the Mixture:

  1. Add the softened dates, nut butter, cardamom, salt, and chia seeds to the food processor with the chopped nuts.
  2. Process the mixture until it forms a sticky dough. If the mixture is too dry, add a teaspoon of water or nut butter at a time until it binds.

3. Shape the Rolls:

  1. Scoop out small portions of the dough (about a tablespoon) and roll them into cylindrical or ball shapes.
  2. Roll the finished rolls in finely chopped pistachios for a decorative coating, if desired.

4. Chill and Serve:

  1. Place the rolls on a parchment-lined tray and refrigerate for 30 minutes to set.
  2. Serve chilled or at room temperature as a healthy snack or dessert.
