- 1/2 cup cashews, roughly chopped
- Optional:
- 1/4 cup shredded coconut

Instructions
-
1. Prepare the Nuts:
- Toast pistachios, almonds, walnuts, and cashews in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant. Let cool slightly.

2. Process the Dates:
- Pit and chop the Medjool dates into smaller pieces.
- In a large skillet over low heat, add the chopped dates. Stir gently to soften, creating a sticky paste.
3. Combine Ingredients:
- Add the chopped nuts to the skillet with the softened dates. Mix well until the nuts are evenly distributed throughout the date mixture.
- If desired, add shredded coconut or crumbled cookies for extra flavor and texture.
4. Form the Rolls:
- While the mixture is still warm, scoop out portions and roll into small, bite-sized logs or balls.
- Optionally, roll each piece in shredded coconut for a decorative touch.
5. Chill and Serve:
- Place the rolls on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to set.
- Serve chilled or at room temperature.
Notes
- Storage: Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
- Nut Variations: Substitute or omit nuts based on your preferences or dietary restrictions.
- Texture Tip: Avoid over-processing the nuts; chunks add a delightful crunch to the rolls.
