Description

These no-bake Nut & Date Rolls are a naturally sweet and healthy snack made with dates, nuts, and optional coconut or crumbled cookies for added flavor. Easy to make and perfect for a quick energy boost, they’re a great alternative to sugar-based treats. Keywords: no-bake date rolls, healthy date snacks, nut and date rolls.

Ingredients

Scale
  • 2 cups Medjool dates, pitted and chopped
  • 1/2 cup pistachios, roughly chopped
  • 1/2 cup almonds, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup cashews, roughly chopped
  • Optional:
    • 1/4 cup shredded coconut
    • 1/4 cup crumbled cookies

Instructions

  • 1. Prepare the Nuts:

    1. Toast pistachios, almonds, walnuts, and cashews in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant. Let cool slightly.
    2. Coarsely chop the nuts.

    2. Process the Dates:

    1. Pit and chop the Medjool dates into smaller pieces.
    2. In a large skillet over low heat, add the chopped dates. Stir gently to soften, creating a sticky paste.

    3. Combine Ingredients:

    1. Add the chopped nuts to the skillet with the softened dates. Mix well until the nuts are evenly distributed throughout the date mixture.
    2. If desired, add shredded coconut or crumbled cookies for extra flavor and texture.

    4. Form the Rolls:

    1. While the mixture is still warm, scoop out portions and roll into small, bite-sized logs or balls.
    2. Optionally, roll each piece in shredded coconut for a decorative touch.

    5. Chill and Serve:

    • Place the rolls on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to set.
    • Serve chilled or at room temperature.

Notes

  • Storage: Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
  • Nut Variations: Substitute or omit nuts based on your preferences or dietary restrictions.
  • Texture Tip: Avoid over-processing the nuts; chunks add a delightful crunch to the rolls.
