For the Doughnuts:

  • 4 cups cake flour
  • 4 tbsp castor sugar
  • 4 tbsp butter, softened
  • 1 tbsp milk powder (optional, for extra softness)
  • Vegetable oil, for frying

For Coating & Filling:

  • 1 cup castor sugar (for tossing)
  • Fresh cream (for filling)

Instructions

1. Prepare the Dough:

  1. In a large mixing bowl, combine cake flour and 4 tbsp castor sugar.
  2. Add softened butter and milk powder (if using). Mix until it forms a smooth dough.

2. Knead & Roll:

  1. Lightly flour a countertop and knead the dough for a few minutes until smooth.
  2. Roll out the dough to about ½ inch thick.
  3. Use a round cutter (or a glass) to cut doughnut shapes. Cut out the centers to create classic doughnuts.

3. Fry the Doughnuts:

  1. Heat vegetable oil in a deep pan over medium heat.
  2. Test the oil by dropping a small piece of dough—it should sizzle immediately.
  3. Fry doughnuts in batches for 2-3 minutes per side, until golden brown.
  4. Drain on paper towels to remove excess oil.

4. Coat & Fill:

  1. While still warm, toss doughnuts in castor sugar to coat them evenly.
  2. Let them cool slightly, then fill with fresh cream using a piping bag.

Notes

  • For extra softness, let the dough rest for 15 minutes before rolling.
