Ingredients
Scale
- 20 rice paper wrappers (6-inch diameter)
- 1 lb cooked shrimp, finely chopped
- 1/4 cup chives, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon freshly ground black pepper
- Olive oil or non-stick cooking spray (for greasing & crisping)
- Dipping sauce of choice (optional: soy sauce, sweet chili, or peanut sauce)
Instructions
1. Preheat & Prep:
- Preheat the oven to 375°F (190°C).
- Lightly grease a baking sheet with olive oil or non-stick cooking spray.
2. Make the Filling:
- In a bowl, mix together chopped shrimp, chives, garlic, soy sauce, sesame oil, and black pepper until well combined.
3. Assemble the Dumplings:
- Dip a rice paper wrapper in warm water for 10–15 seconds, just until pliable. (Do not over-soak, or it will become too sticky!)
- Lay the softened wrapper on a clean, damp kitchen towel.
- Place 1 tablespoon of shrimp filling near the bottom of the wrapper, leaving space around the edges.
- Fold in the sides, then roll the wrapper tightly, like a mini burrito.
- Place the dumpling seam-side down on the greased baking sheet.
- Repeat with the remaining wrappers and filling.
4. Bake to Perfection:
- Lightly brush or spray the tops of the dumplings with olive oil.
- Bake for 20–25 minutes, until golden brown and crispy. (Keep an eye on them toward the end to prevent over-baking!)
5. Serve & Enjoy:
- Let dumplings cool slightly before serving.
- Serve with your favorite dipping sauce, such as soy sauce, sweet chili, or peanut sauce.
Notes
- For extra crispiness, broil for the last 2–3 minutes of baking.
- Make it spicy by adding chili flakes or sriracha to the shrimp mixture.
- Rice paper tip: If the wrappers feel too sticky, lightly dampen your fingers while working with them.
- Gluten-Free Option: Use tamari instead of soy sauce for a gluten-free version!
