Description

These Baked Shrimp and Chive Rice Paper Dumplings are a crispy, flavorful alternative to traditional fried dumplings!   • 20 rice paper wrappers (6-inch diameter)
  • 1 lb cooked shrimp, finely chopped
  • 1/4 cup chives, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon freshly ground black pepper
  • Olive oil or non-stick cooking spray (for greasing & crisping)
  • Dipping sauce of choice (optional: soy sauce, sweet chili, or peanut sauce)

Instructions

1. Preheat & Prep:

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a baking sheet with olive oil or non-stick cooking spray.

2. Make the Filling:

  1. In a bowl, mix together chopped shrimp, chives, garlic, soy sauce, sesame oil, and black pepper until well combined.

3. Assemble the Dumplings:

  1. Dip a rice paper wrapper in warm water for 10–15 seconds, just until pliable. (Do not over-soak, or it will become too sticky!)
  2. Lay the softened wrapper on a clean, damp kitchen towel.
  3. Place 1 tablespoon of shrimp filling near the bottom of the wrapper, leaving space around the edges.
  4. Fold in the sides, then roll the wrapper tightly, like a mini burrito.
  5. Place the dumpling seam-side down on the greased baking sheet.
  6. Repeat with the remaining wrappers and filling.

4. Bake to Perfection:

  1. Lightly brush or spray the tops of the dumplings with olive oil.
  2. Bake for 20–25 minutes, until golden brown and crispy. (Keep an eye on them toward the end to prevent over-baking!)

5. Serve & Enjoy:

  1. Let dumplings cool slightly before serving.
  2. Serve with your favorite dipping sauce, such as soy sauce, sweet chili, or peanut sauce.

Notes

  • For extra crispiness, broil for the last 2–3 minutes of baking.
  • Make it spicy by adding chili flakes or sriracha to the shrimp mixture.
  • Rice paper tip: If the wrappers feel too sticky, lightly dampen your fingers while working with them.
