  • 4 garlic cloves, minced
  • 1 lemon, zest only
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh sage, finely chopped
  • 2 tbsp fresh thyme leaves
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Place a roasting rack inside a roasting pan.
  2. Prepare the Herb Butter:
    • In a small bowl, mix the softened butter, minced garlic, lemon zest, rosemary, sage, thyme, salt, and black pepper until well combined.
  3. Prepare the Turkey Breast:
    • Pat the turkey breast dry with paper towels.
    • Using your fingers, gently loosen the skin from the meat without tearing it. Spread half of the herb butter under the skin, ensuring it is evenly distributed. Spread the remaining butter over the surface of the turkey breast.
  4. Roast the Turkey Breast:
    • Place the turkey breast on the roasting rack, skin side up.
    • Roast in the preheated oven for 1 hour and 45 minutes to 2 hours, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the meat.
    • Baste the turkey breast with pan drippings every 30 minutes to keep it moist.
  5. Rest and Serve:
    • Remove the turkey breast from the oven and let it rest for 15–20 minutes before carving. This allows the juices to redistribute for maximum tenderness.
