Description

Thick slices of red cabbage roasted to perfection, topped with a savory garlic butter and a crispy layer of melted Parmesan cheese. A flavorful, low-carb, and nutrient-rich side dish or main course!

  • 1 large red cabbage
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

 

  • 1 teaspoon flaky sea salt (for garnish)

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the cabbage: Slice the red cabbage into ¾-inch thick steaks and arrange them on the baking sheet.
  • Make the garlic butter: In a small bowl, mix melted butter, olive oil, minced garlic, salt, pepper, thyme, and smoked paprika.
  • Coat the cabbage: Brush the mixture generously over each cabbage steak.
  • Roast for 25 minutes, flipping halfway through.
  • Add Parmesan: Sprinkle Parmesan cheese evenly over each steak and return to the oven for another 10 minutes, or until the cheese is melted and golden.

 

  • Garnish & serve: Top with fresh parsley and flaky sea salt before serving.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end.
  • Substitute Parmesan with nutritional yeast for a dairy-free option.
