Ingredients

  • 1 fresh French baguette, halved lengthwise

  • 1 roasted duck breast (pre-cooked or homemade)

  • 1 large egg

  • 1 tsp olive oil or duck fat (for frying)

  • Mixed greens or butter lettuce

  • Salt and freshly cracked black pepper

  • Everything bagel seasoning or dried herbs (optional)

Optional Add-ons:

  • Pickled onions or thinly sliced cucumbers


Instructions

  1. Prepare the Duck:

    • If using pre-cooked duck breast, slice it thinly against the grain.

    • For homemade, season duck with salt and pepper, sear skin-side down until golden, then roast in a 400°F oven until medium doneness. Let it rest, then slice.

  2. Fry the Egg:

    • Heat olive oil or duck fat in a skillet over medium heat.

    • Crack in the egg and cook to your desired doneness (preferably with a runny yolk). Season with salt, pepper, and optional seasoning.

  3. Toast the Baguette (optional):

    • Toast the inside of the baguette halves for a crispy texture.

  4. Assemble the Sandwich:

    • Layer greens on the bottom half of the baguette.

    • Add the fried egg, sliced duck breast, and any add-ons.

    • Top with the other baguette half and serve immediately.
