Ingredients

  • 1 (4-5 lb) lamb shoulder
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup red wine (optional)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix garlic, rosemary, thyme, olive oil, mustard, salt, and pepper into a paste.
  3. Rub the mixture all over the lamb and place it in a roasting pan.
  4. Roast for 3-4 hours, basting occasionally. Add red wine in the last hour for extra depth of flavor.
  5. Let the lamb rest for 15 minutes before slicing. Serve warm.

  • For a crispier crust, increase oven temperature to 450°F (232°C) for the last 15 minutes.
