- 1 (4-5 lb) lamb shoulder
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup red wine (optional)
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, mix garlic, rosemary, thyme, olive oil, mustard, salt, and pepper into a paste.
- Rub the mixture all over the lamb and place it in a roasting pan.
- Roast for 3-4 hours, basting occasionally. Add red wine in the last hour for extra depth of flavor.
- Let the lamb rest for 15 minutes before slicing. Serve warm.
