Description

This Homemade Ravioli with Brown Butter Sauce is a luxurious yet simple dish, featuring tender homemade pasta pockets filled with your choice of ricotta, spinach, or butternut squash. Tossed in a rich, nutty brown butter sauce and finished with crispy sage and parmesan, this dish is perfect for a gourmet dinner at home!

For the Ravioli Dough:

  • 2 cups (250g) all-purpose flour
  • 2 large eggs
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp water (if needed)

For the Ravioli Filling (Choose One):

Classic Ricotta & Spinach

  • 1 cup ricotta cheese
  • 1/2 cup cooked spinach, chopped
  • 1/4 cup parmesan cheese, grated
  • 1 clove garlic, minced
  • Salt & black pepper to taste

Butternut Squash & Parmesan

  • 1 cup roasted butternut squash, mashed
  • 1/4 cup parmesan cheese, grated
  • 1/2 tsp nutmeg
  • Salt & black pepper to taste

For the Brown Butter Sauce:

  • 4 tbsp unsalted butter
  • 68 fresh sage leaves
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup parmesan cheese, for garnish

Instructions

1. Make the Ravioli Dough:

  1. On a clean surface, form a flour mound with a well in the center.
  2. Add eggs, salt, and olive oil into the well.
  3. Gradually mix the flour into the eggs using a fork, then knead into a smooth dough.
  4. Wrap in plastic wrap and rest for 30 minutes.

2. Prepare the Filling:

  1. Mix ricotta, spinach, parmesan, garlic, salt, and pepper (or your chosen filling ingredients) in a bowl.
  2. Set aside until ready to fill the ravioli.

3. Roll & Fill the Ravioli:

  1. Roll out the dough into thin sheets using a pasta roller or rolling pin.
  2. Place small spoonfuls of filling about 1 inch apart on one sheet.
  3. Lay another sheet of dough over the top and press around the filling to seal.
  4. Cut into ravioli shapes using a knife or ravioli cutter.

4. Cook the Ravioli:

  1. Bring a large pot of salted water to a boil.
  2. Gently add the ravioli and cook for 2-3 minutes, until they float.
  3. Drain and set aside.

5. Make the Brown Butter Sauce:

  1. In a large skillet, melt butter over medium heat until it turns golden brown and nutty.
  2. Add sage leaves and cook until crisp (about 1 minute).
  3. Stir in salt and pepper, then toss in the cooked ravioli to coat.

6. Serve & Enjoy:

  1. Plate the ravioli and drizzle with the brown butter sauce.
  2. Garnish with extra parmesan and crispy sage.
  3. Serve immediately and enjoy this gourmet homemade pasta dish!

Notes

  • No fresh pasta? Use store-bought ravioli and just make the brown butter sauce.
  • Want it creamy? Add a splash of heavy cream or mascarpone to the sauce.
