For the Mac and Cheese:

  • 1 pound elbow macaroni
  • 1/2 cup butter
  • 1/3 cup flour
  • 5 cups milk
  • 4 cups sharp cheddar cheese, shredded
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Pulled Pork:

  • 4 cups pulled pork (homemade or store-bought)
  • 1 cup BBQ sauce (or to taste)

Instructions

Step 1: Cook the Macaroni

  1. Cook the elbow macaroni according to the package instructions. Drain and set aside.

Step 2: Make the Cheese Sauce

  1. In a large saucepan, melt butter over medium-low heat.
  2. Add flour and whisk constantly for 1-2 minutes to create a roux.
  3. Slowly pour in milk, whisking until smooth. Simmer for 5 minutes, stirring occasionally, until thickened.
  4. Gradually add in shredded cheddar cheese, one cup at a time, whisking until melted.
  5. Season the cheese sauce with paprika, salt, and black pepper.

Step 3: Assemble the Mac and Cheese

  1. Add the cooked macaroni to the cheese sauce and mix until well coated.
  2. Stir in 3 cups of pulled pork and ¼ cup BBQ sauce.

Step 4: Bake the Mac and Cheese

  1. Preheat the oven to 350°F (175°C) and grease a casserole dish with nonstick spray.
  2. Transfer the mac and cheese mixture to the prepared dish.
  3. Top with the remaining pulled pork and drizzle with the remaining BBQ sauce.
  4. Bake for 10 minutes until warmed through.

Step 5: Serve & Enjoy

  1. Remove from the oven and serve hot. Enjoy!
