- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 cup thinly sliced kale or collard greens
- 6 oz Portuguese chorizo (chouriço), sliced
- Extra olive oil for drizzling
Instructions
- Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until soft and fragrant.
- Cook potatoes: Add potatoes, broth, salt, pepper, and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.
- Blend the soup: Use an immersion blender to blend the soup until smooth.
- Add greens: Stir in sliced kale or collard greens and simmer for 5 minutes until wilted.
- Prepare chorizo: In a separate pan, fry chorizo slices until crispy, then add them to the soup.
- Serve: Drizzle with olive oil and serve hot with crusty bread.
Notes
- Traditional Caldo Verde uses thinly sliced Portuguese chouriço, but Spanish chorizo or smoked sausage can be used as a substitute.
- If you prefer a chunkier texture, blend only half the soup and leave some diced potatoes whole.
