- 3/4 cup granulated sugar

For the Cobbler Topping:
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 11/16 cup butter (melted)
- 1/2 cup buttermilk
Instructions
Step 1: Preheat & Prepare Pineapple Filling
- Preheat oven to 375°F (190°C).
- In a saucepan, mix drained pineapple, cornstarch, sugar, and cinnamon over medium heat.
- Cook, stirring, until the mixture thickens slightly (about 5 minutes).
- Pour the mixture into a greased 9×13-inch baking dish.
Step 2: Make the Cobbler Topping
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Stir in melted butter and buttermilk until a soft dough forms.
Step 3: Assemble & Bake
- Drop spoonfuls of the batter over the pineapple mixture, spreading gently.
- Bake for 35-40 minutes, or until the top is golden brown and firm.
Step 4: Cool & Serve
- Let cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream!
