  • 3 (20 oz) cans pineapple (drained)
  • 3 tbsp cornstarch
  • 3/4 cup granulated sugar
  • 1/2 tsp ground cinnamon

For the Cobbler Topping:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 11/16 cup butter (melted)
  • 1/2 cup buttermilk

Instructions

Step 1: Preheat & Prepare Pineapple Filling

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, mix drained pineapple, cornstarch, sugar, and cinnamon over medium heat.
  3. Cook, stirring, until the mixture thickens slightly (about 5 minutes).
  4. Pour the mixture into a greased 9×13-inch baking dish.

Step 2: Make the Cobbler Topping

  1. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  2. Stir in melted butter and buttermilk until a soft dough forms.

Step 3: Assemble & Bake

  1. Drop spoonfuls of the batter over the pineapple mixture, spreading gently.
  2. Bake for 35-40 minutes, or until the top is golden brown and firm.

Step 4: Cool & Serve

  1. Let cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream!
