For the Chicken:
- 2 lbs chicken thighs (bone-in, skin-on preferred)
- 4 cloves garlic, minced
- 3 tbsp lime juice (freshly squeezed)
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Green Sauce:
- 1/2 cup mayonnaise or Greek yogurt
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and chopped
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 1 tsp white vinegar
- 1 tbsp olive oil
- 1/2 tsp salt
Instructions
- Marinate the Chicken: In a bowl, whisk together garlic, lime juice, olive oil, soy sauce, cumin, paprika, oregano, salt, and black pepper. Coat the chicken in the marinade and refrigerate for at least 1 hour (or overnight for best flavor).
- Prepare the Green Sauce: Blend all sauce ingredients until smooth. Adjust seasoning if needed and chill until ready to serve.
- Grill the Chicken: Preheat the grill to medium-high heat. Grill the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Serve: Let the chicken rest for 5 minutes before serving. Drizzle with the green sauce and enjoy!
