Ingredients

Units Scale

For the Chicken:

  • 2 lbs chicken thighs (bone-in, skin-on preferred)
  • 4 cloves garlic, minced
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Green Sauce:

  • 1/2 cup mayonnaise or Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and chopped
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tsp white vinegar
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions

  1. Marinate the Chicken: In a bowl, whisk together garlic, lime juice, olive oil, soy sauce, cumin, paprika, oregano, salt, and black pepper. Coat the chicken in the marinade and refrigerate for at least 1 hour (or overnight for best flavor).
  2. Prepare the Green Sauce: Blend all sauce ingredients until smooth. Adjust seasoning if needed and chill until ready to serve.
  3. Grill the Chicken: Preheat the grill to medium-high heat. Grill the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  4. Serve: Let the chicken rest for 5 minutes before serving. Drizzle with the green sauce and enjoy!

Notes

  • For an oven-baked version, roast the chicken at 400°F (200°C) for 30–35 minutes.
  • Add a touch of honey to the marinade for a hint of sweetness.
  • Serve with rice, roasted potatoes, or a fresh salad.
