Description

These Pepperoni Pizza Bites are a healthier take on mini bagel pizzas, made from scratch using Greek yogurt dough and baked in a muffin tin. Packed with melty cheese, savory turkey pepperoni, and zesty marinara, these gluten-free-friendly bites are perfect for snacking, meal prep, or appetizers!

  • 2/3 cup Marinara or Pizza Sauce

  • 1 cup All-Purpose Flour (whole wheat or gluten-free mix, unbleached)
  • 2 teaspoons Baking Powder
  • 3/4 teaspoon Kosher Salt
  • 1/4 teaspoon Red Pepper Flakes (optional, for spice)

Oils & Vinegars

  • Olive Oil Spray

Dairy

  • 1 cup Non-Fat Greek Yogurt
  • 1 cup Part-Skim Mozzarella Cheese, shredded

Instructions

1. Preheat & Prepare

  • Preheat oven to 375°F (190°C).
  • Spray a mini muffin tin with olive oil spray.

2. Make the Dough

  • In a bowl, mix flour, baking powder, and salt.
  • Add Greek yogurt and stir until a dough forms.

3. Assemble the Pizza Bites

  • Divide the dough into small portions and press each into the mini muffin tin.
  • Add a spoonful of marinara sauce into each dough cup.
  • Sprinkle mozzarella cheese and top with chopped turkey pepperoni.

4. Bake

  • Bake for 18-20 minutes, or until golden brown and bubbly.

5. Serve & Enjoy

  • Let cool slightly and enjoy warm!
  • Optional: Sprinkle with red pepper flakes for extra heat.
