- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Dijon mustard (for binding)
For the Parmesan Crust:
- 1/2 cup Parmesan cheese, finely grated
- 1/2 cup panko breadcrumbs (for extra crunch)
- 1 tsp garlic powder
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1 tsp fresh rosemary, finely chopped
- 1/2 tsp paprika
- 2 tbsp olive oil (for pan-frying)
Instructions
1. Prepare the Lamb Chops:
- Pat the lamb chops dry with paper towels.
- Season both sides with salt and black pepper.
- Lightly coat each chop with Dijon mustard to help the crust stick.
2. Make the Parmesan Crust:
- In a bowl, mix Parmesan, panko breadcrumbs, garlic powder, thyme, rosemary, and paprika.
- Press each lamb chop into the Parmesan mixture, ensuring an even coating.
3. Cook the Lamb Chops:
- Heat olive oil in a large skillet over medium-high heat.
- Sear lamb chops for 3-4 minutes per side, or until golden brown and crispy.
- If needed, finish in a 375°F (190°C) oven for 5 minutes for a more even cook.
4. Serve & Enjoy:
- Let the lamb chops rest for 5 minutes before serving.
- Pair with roasted potatoes, sautéed greens, or a lemony salad for a complete meal.
Notes
- For extra crispiness, bake chops at 400°F (200°C) for 10 minutes after searing.
- Want a stronger crust? Dip the chops in a beaten egg before coating with the Parmesan mixture.
- Prefer oven-baked? Bake at 425°F (220°C) for 15-18 minutes, flipping halfway.
