  • 2 tablespoons butter
  • 1 onion, diced

  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie or boiled)
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream

For the dumplings:

 

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter, melted

Instructions

  • In a large pot, melt butter over medium heat. Add onion, carrots, celery, and garlic; sauté for 5 minutes.
  • Pour in chicken broth, then stir in shredded chicken, peas, thyme, salt, and pepper. Simmer for 10 minutes.
  • Add heavy cream and reduce heat to low.
  • In a separate bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to make dumpling batter.
  • Drop spoonfuls of dough into the simmering broth. Cover and cook for 15 minutes until dumplings are fluffy.

 

  • Serve hot, optionally garnished with fresh parsley.
