Crust:
- 28 mint Oreo cookies (crushed)
- 5 tbsp unsalted butter (melted)

- 14 oz marshmallow creme
- 1/3 cup crème de menthe
- 2 cups heavy whipping cream (whipped to stiff peaks)

Instructions
- Prepare the crust:
- In a food processor, crush the mint Oreo cookies into fine crumbs. Reserve 2–3 tbsp for garnish if desired.
- Mix the crushed Oreos with the melted butter until evenly combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Place in the refrigerator to chill while preparing the filling.
- Make the filling:
- In a large bowl, whisk together the marshmallow creme and crème de menthe until smooth and well combined.
- Gently fold the whipped heavy cream into the mint mixture until fully incorporated, ensuring the filling stays light and fluffy.
- Assemble the pie:
- Pour the mint filling into the prepared Oreo crust, spreading it out evenly with a spatula.
- Chill:
- Cover the pie and refrigerate for at least 4 hours, or until fully set.
- Garnish and serve:
- Before serving, top with additional whipped cream and sprinkle with crushed Oreo cookies. Slice and enjoy!
