  • 1 1/4 tsp kosher salt
  • 3/4 tsp freshly ground black pepper
  • 1/2 tsp instant yeast
  • 1 1/2 cups room-temperature water
  • 2 tbsp cornmeal, for dusting

Instructions

1. Mix the Dough

  1. In a large mixing bowl, combine flour, minced garlic, chopped rosemary, salt, black pepper, and yeast.
  2. Add water and mix with a wooden spoon or hands until a wet, sticky dough forms (about 30 seconds).

2. First Rise (18-24 Hours)

  1. Cover the bowl tightly with plastic wrap and let the dough rest at room temperature for 18-24 hours until bubbles form on the surface.

3. Shape the Dough & Second Rise (2 Hours)

  1. Lightly oil a 10-inch cast iron skillet and dust with cornmeal.
  2. On a floured surface, gently shape the dough into a round ball.

4. Bake & Serve

  1. Preheat oven to 450°F (232°C).
  2. Bake for 30-40 minutes, until the crust is golden brown and crisp.
  3. Let cool for 10-15 minutes, then slice and enjoy!
